Appetizers

These low carbohydrate appetizers also make excellent between meal snacks.

Chili Cheese Dip

1 ripe avocado
4 oz cream cheese, softened
½ cup sour cream
1 tbs. lemon juice
1/4 cup ground walnuts
1/2 tsp. chili powder

Combine avocado, cream cheese, sour cream and lemon juice. Blend until smooth. Stir in nuts and chili powder. Chill 2-3 hours. Use as vegetable or shrimp dip.

Curry Cheese Dip

8 oz. cream cheese
1/2 cup sour cream
1-1/2 tsp curry powder
1 tbs. lemon juice
Seasoned salt

Allow cheese to stand at room temperature to soften. Combine with sour cream. Beat until smooth. Add remaining ingredients. Mix well. Serve with seafood, meatballs, or as a dip for raw vegetable.

Spicy Hot Almonds

1/4 cup butter
1/4 cup oil
1-1/2 cups almonds
1 tbs. celery salt
1/2 tsp. salt
1/8 tsp. cayenne
1/2 tsp. chili powder

Melt butter in skillet. Add oil and almonds. Cook, stirring, until nuts are golden. Drain. Blend remaining ingredients. Toss with nuts.

Makes 1-1/2 cups

Tasty Toasted Almonds

1 tbs. butter
2 cups whole blanched almonds.
Flavored salt (garlic, onion, celery, etc.)
Parmesan cheese

Melt butter in a small pan. Add almonds. Toss to coat well with butter. Bake in 300 degree oven for about 30 minutes or until light brown. Stir often. Remove from oven. While hot, sprinkle with your choice of salt and parmesan cheese. Cool. Store in an airtight jar.
