Low Carbohydrate Recipes
These low carbohydrate recipes are suitable for diabetics, those with insulin resistance, for weight loss, or for those just looking for new and interesting recipes.
I have adapted these recipes from many sources. Some started out as family recipes that I adjusted. Others came from various books and magazines and were adjusted to fit the low carbohydrate parameters.
There are many benefits to a low carbohydrate diet. It is essential for diabetics and people who are trying to lose weight. In both cases it is important not to overeat.
If you eat more food than your body needs, the excess will be turned into carbohydrates even if it started out as protein. However, overeating is less likely to occur if you stick to protein and good fats and go easy on carbohydrates.
If you have high cholesterol, you may want to stick to fish, poultry and vegetables and use olive oil margarine instead of butter. However, with a low carbohydrate diet, if cholesterol is elevated the good HDL is elevated as well as the total cholesterol. The percentage of HDL to total cholesterol should remain good.
